I had two 20 lb turkeys to cook this year for Thanksgiving. I will smoke one and deep fry one. This is the first year I've deep fried a turkey. Everyone warned me, repeatedly, to ensure the fried turkey was dry. A friend who grew up in Ohio said he used to hang his turkeys from the rafters in the garage in order to let them dry out. Now, Ohio is cold this time of year, South Carolina is not. I decided to turn down the temp in my RV and hang my turkeys there to dry. It worked like a charm.
