Description
To properly candy fruit the fruit needs to be kept under the syrup to exchange, via osmosis, water with sugar. To keep the fruit under whater i designed this super nice voronoi screen. It is designed for a 20cm pot, but you can scale X/Y to adapt to any other pot size you want.
Print in PETG to be food safe and resistant to heat.
How to make Candied Fruit (cold process)
1) take fruit peels (or pieces of pulp)
1.1) boil them for 1 minute (to make them softer)
1.2) you can leave orange or zesty peels in water in the fridge (simple water) overnight to remove the bitterness
2) make 1:1 sugar syrup, enough to cover well all the fruit (eg: 1L water, 1kg sugar):
2.1) mix 1:1 sugar and water and slowly bring to boiling point
2.2) boil for 3 minutes
3) cover fruit with hot syrup and leave completely covered (use my screen)
3.1) fruit in syrup will slowly lose water (diluting the syrup) and embed sugar via osmosis
3.2) once a day, for 7 days remove the syrup from the fruit and put in a pot
3.3) boil the syrup to reduce it, by removing a bit of the water released by fruit to bring back the sugar content back to 1:1
Now you have delicious Candied Fruit to garnish and decorate or just eat (because it is amazing)
