Making Cookies
I used this recipe for gingerbread cookies that don't rise or spread. After rolling out the dough to about 6mm, transfer it to your cookie sheet lined with parchment paper. Dip the cutter in water to (keep it from sticking) and press into the dough. Wiggling the cutter a little while pressed into the dough may help create more of a gap between the pieces, making them easier to separate after baking. Pull away the excess dough around the outside and then gently lift the cutter. Bake the cookie until pretty dry.

Let the cookie cool completely. To separate the pieces, you'll need to go at the seams with a slim knife blade and then gently tease the pieces apart. And if you are more artistically inclined than me, you can re-assemble and decorate with your favorite scene.
