Summary
The life-size realistic 81mm mortar you've asked for is here -- no AMS is needed. The text is inserted, so no color changes are needed. You can even snap on the yellow charges to the tail fin, just like the real thing. This is a model of the M821 mortar with an adjustable fuze at the top that you can rotate. These mortars are used by tons of counties around the world, such as NATO counties (including the US), India, Myanmar, and more.
