do you know how one could design a section of negative of the auger so it could be used to screw onto the auger and clean it? I’m a chocolate maker and spatula scraping is tedious!

You can make a negative auger sleeve by modeling a cylinder and subtracting the auger shape from it with a Boolean Difference. After creating the negative shape, you just need to add a bit of clearance so the positive auger can slide in smoothly.
