Preparation
- Put the flour and sugar in a bowl. Add the butter in small pieces and the egg and knead into a shortcrust pastry. The dough may initially seem crumbly, but with further kneading it will become a kind of crumb and finally a homogeneous dough. If necessary, work with your hands at the end.
- Form the dough into two balls and wrap them in foil and refrigerate for at least half an hour. Longer is even better.
- Preheat oven to 175 degrees Celsius top and bottom heat. Take the first ball of dough out of the refrigerator and let it come to room temperature briefly. Lightly flatten with your hand. Then roll out on a lightly floured work surface or better between foil.
- Depending on the desired size, cut out about 20-30 cookies and place them on a baking sheet lined with baking paper, leaving a little space between each one. Proceed in the same way with the second portion of dough. Always knead together any leftover dough and cool it briefly again.
- Brush the cookies with a beaten egg yolk if desired. Bake for about 10-12 minutes until golden brown, depending on the thickness. Let cool, remove from the baking sheet and decorate with icing, sprinkles, etc. as desired.
