- Combine flour and sugar in a bowl. Add the butter in small pieces and the egg and knead into a shortcrust pastry. The dough may seem crumbly at first, but will become a kind of crumble and finally a homogeneous dough as you knead it further. If necessary, work it with your hands at the end.
- Shape the dough into two balls and wrap in foil and chill for at least half an hour. Longer is even better.
- Preheat the oven to 175 degrees Celsius (top and bottom heat). Take the first ball of dough out of the refrigerator and let it come to room temperature for a short time. Flatten it slightly with your hand. Then roll it out on a lightly floured work surface or, better yet, between foil.
- Cut out about 20-30 biscuits depending on the desired size and place them on a baking sheet lined with baking paper, leaving a little space between each one. Proceed in the same way with the second portion of dough. Knead the leftover dough together again and cool briefly.
- Brush the biscuits with beaten egg yolk if desired. Depending on the thickness, bake for about 10-12 minutes until golden brown. Let cool, remove from the baking sheet and decorate as desired with icing, sprinkles, etc.
